Mohandas Karamchand Gandhi (or Gandhi, for short) taught respect -NOT tolerance - respect for all religions and social orders. He even invited Muslims, Roman Catholics, Protestants, Jainists and Buddhists to his communes, and they enjoyed his company.
Since its for your ethics class, an interesting topic about Gandhi would be nonviolence when faced with prejudice and bigotry. He is perhaps the best example of that maxim.

I would do something you are interested in. Rosa Parks would be someone good...she was the african american lady who defied the laws and rode in the front of the bus. She died here recently in Atlanta and they dedicated a street to her memory. Lots of ideas out there to choose from. =)
