Anyone out there who has the gift and wants to share their technique?

Absolutely. My technique is very simple and works extremely well. Just before I fall asleep I think about what I want to dream about. I think about that same thing over and over. When I fall asleep I dream it about 90 percent of the time. And, if I don't dream what I want, I can wake myself up from a dream and try again. I know it sounds strange, but it is very possible to do.

It is definitely possible, however the success ratio (on a per dream basis) is extremely low due to the difficulty in mastering this technique. The technique is called Lucid Dreaming and an Internet Search will provide details. It should not be considered a gift. Any success you may or may not have will usually correlate to the amount of practice you are willing to put in.

It does not work by thinking about something before you fall asleep. The way is works is, while you are still sleeping, being able to realize that you are having a dream. If you can, while sleeping, reach this state, then you have an ability to mentally control what events occur in your dream.

A major part of the difficulty revolves around the sleep level. If you are in a light sleep, then realizing you are having a dream, will usually result in you waking yourself up. If you are in deep sleep, then the ability to realize you are dreaming is substantially minimized.

Interesting question. I have practiced meditation for over 35 years and found you can do something akin to what was described in another answer as "lucid dreaming". However, to program your dreams while asleep at night is not so easy, if at all possible. I have been able to influence my dreams by thinking or focusing on an event, person or place. The dreams have most often taken weird twists and turns that are not always pleasant. There is a lot of influence from your unconscious thoughts or desires and emotions that are likely to play a role in your dreaming.

If you want to dream about flying (fantasy flying) you can focus on that each night you go to sleep. Likely, it will take several nights before you experience "flying" in your dreams. The interesting thing I have found is that I have little control on where I go, how fast, how beautiful or horrifying it turns out.

If you find a way to control your dreams to a large extent, maybe you can let us all in on the secret.

The first step is to train yourself to recognize when you are dreaming. Once you know you are dreaming, you have more control over your dreams.

One method I know of is to start training yourself during the day to question whether you are dreaming every time you see your own hand. Eventually, you will begin to do this in your dreams, and then you will be able to figure out you are dreaming when you are.

I have done -- including flying dreams. I usually carry something with me that reminds me to think "tonight I will dream about whatever and remember my dream" sometimes it's a ring (since I rarely wear them).

Several daily reminders and holding it in my mind when I go to sleep seem to do the trick for me.

I hate to say this but I have never heard of anyone to successfully do it more than once or twice. Dreams come from your subconcious so if you are subconciously thinking of that type of stuff you might be able to dream about it.

Also when messing with your body that way be careful not to do it to often because it will cause more problems than you can believe.

I wish I could, but the only time that I controlled my dream, was for years growing up, I would always dream of the bad ugly monster man chasing me, and then one day, I thought about just turning around and facing it, so it would leave me alone, and it worked the next night !

Yes, the phenomena is called "Lucid Dreaming," and I have experienced it myself on occasion. There are ways to train your brain to dream lucidly more often, I have read about it before but can't remember! Many books on dreaming have a chapter about Lucid dreaming, and I'm sure there are even whole books about it that you could look into.
