I don't know if you could spend a whole weekend in either of these places, but from central Oklahoma, there are a couple of places I've found interesting.
North of OKC is Guthrie, OK. It is a town that time has forgotten. We stayed in a hotel on one of the few streets there that was restored in turn-of-the-century (early 1900s) period furniture. When I awoke that morning and looked out our window, I felt like I was in another time! But we had to go into OKC for a movie and dinner. It was not that developed. But that is what made it quaint.
I also remember stumbling across Quartz Mountain state park outside of a little town in SW Oklahoma. It had a very nice state park run restaurant that overlooked the lake. The service and food were excellent. I seem to recall you can stay there. Check with the state parks department. But the granite rocks rising out of the flat plains there were bizarre looking. If you like boating and fishing, I think that is available there, too. But it is pretty remote.
I would look into those thoroughly or just go there on day trips and decide if you want to book a weekend sometime.

When the g/f and I want to get away we look for quiet spots that rent cabins on/near a lake. We bring a boombox loaded up with our favorite tunes, some adult beverages, a deck of cards (we love to beat the pants off each other at gin rummy). We live off the bar-b-q and just chill together. Sleep in, eat and drink well and venture out to rent a boat or sightsee only if we feel like it. And sometimes we meet the nicest people at campfires.
Anything around Lake Texoma?

There's a nice Dury Hotel just off of Hwy 44. A park is less than 5 min away. Central located and nice.

Get on the Amtrak (VERY CHEEP) ride to Ft. Worth. Walk 5 blocks (or take a cab) to Sundance Square. there is are several Bed And Breakfasts there. Stay the night, walk around and go to one of 3 museums, many very nice restraunts, and on weekends several live bands of a variety of types of music. Then sleep wake up walk around some more, even watch sports at Billy Miner, then get back on train around 5 p.m. ( you can store your luggage at the bottom of the B&B after you check out) arrive in OKC at 10ish.
Every part of the trip is so laid back. Just pack one back pack for your overnight stay.

I'd say take a flight to San Antonio or drive. Its a nice city and its alot of fun.
If thats too far check out www.texas.com find out where yo want to go then us www.hotwire.com to find the cheapest hotel.
I use it all the time and have stayed at holiday inn's for under 40 bucks a night, you can cross reference expedia.com with hotwire to figure out which hotel your getting since hotwire wont tell you until you pick one.
I lived in Altus,OK and have family in Dallas....
