There's two ways you can do this--
Copy/paste- In the original e-mail, highlight the text you want to forward, right-click, pick copy off the pop-up menu. Then go to your compose field and righ-click, pick paste. Ta-dah!
Forward- Click your forward button, then in the compose field, highlight the text you want to delete (the previous sender's address), and hit delet on your keyboard.
Note-
In the compose field, you can do whatever editing of the text you want.

If you are using Yahoo! Mail, go to the Yahoo! Mail page. Click on "Options" in the upper right hand corner and select "General Greferences". Scroll down to Message Actions and under Forwarding Messages, check the "forward as inline text". This will let you just erase the email address and any headers from the body of the message.

Simple.
Click on forward button. The original sender's email and other details appear as text in the body of the message. You can make changes to it.

Copy the contents of the email and then paste it into a new email form. Then the "from" address will be yours.

instead of forwarding it, cut it and paste it into a new message. Leave off the header information.
