its called a Parabolic microphone, i have used these in the military on several occasions.I know these portable units that my team used were good up to 500 yards and could pick up on normal conversations at that range.

Various ways. There are microphones that can get a lot of range. Also, it is possible that there are microphones and recorders that are closer to the animals, closer than humans can approach safely, but previously concealed. If there is a timer in the recorder, it's not all that difficult to put vision and sound together. In sync.

They use a "shotgun" microphone. It's a condenser (powered) microphone with a very narrow pick up pattern so that it can be aimed at a specific target without picking up sounds from the surrounding area.

I believe the microphones they use are called directional microphones where a concentrated "beam" is aimed at the source or they maybe taped previously then edited
