Since we are part of the universe, and expanding with it... how can we tell that this expansion occurs...

A good way to prove that the Universe is expanding is not only the redshift (things are moving away from us), but the better proof would be the Hubble Deep Field. The pictures taken by the HST in the Deep Field program show a time where galaxies were extremely close by compared to today's standards. Hi,

It was discovered long ago just by using a great telescope. The person who discovered this realized that stars have a red colour depending on their position. And the brighter it is the near they are to us.

Something like that... Then he discovered also because of these red light that they are moving away from us. Then they thought the universe is expanding.

the red shift is reliable but gravitational force can not be measured because for that one has to measure the acceleration of the earth and besides there are many teresstrial bodies to account for
