First, "something is eating me out" is incorrect. It should be, something is eating at me. This means that something is annoying me or bugging me. An example would be: "I can't remember the name of my favorite song, it is really eating at me."
The second one basically means, "I can't understand what I am doing that is causing you to be upset."

1. I think this should be: Is something eating you? or Something is eating me. It means I have something that's been bothering me. Or if someone looks upset, what's eating you=why do you look so upset?
2. Why are you angry with me? Why are you in the process of getting angry or erupting (I see you getting more and more annoyed and soon you'll explode in anger).
