can someone explain the significance of channels on car amplifiers?

whats better, having one channel or multiple channels?

depends on how many speakers you are wanting to run
for mids and highs, multi-channel are better
for bass, one channel if you are using one speaker
I have an Alpine 4-channel for mids and highs and a 2-channel Crunch running 2 bass
