Zero is zero, symbolised by 0. Absolute zero is a term that is commonly referred to as the theoretical minimum in temperature, but it wouldn't have a mathematical symbol per se as it is a physical constant.

Absolute zero, temperature? 0 K (for 0 Kelvin) or about −273.15 °C, both in metric. Or, in Impereal units, −459.67 °F or 0 °R (For, 0 degrees Rankine.)

As others have stated, I don't think that there is a specific symbol other than to state it's value with it's units.

As far as I know there is no dedicated symbol for absolute zero like we have for pi infinity or some other constants. You could use

0K or -273.15 degrees C (put a small circle for the word degrees, i don't know how to get it into this) or why don't you invent a symbol and popularize it?

I am compleating a masters degree in the Physics of Materials (Specifically properties of materials at low temperatures) and in all my work I have never heard of a dedicated symbol for absolute zero.

0 K (K as in Kelvin). There is no dedicated symbol like c for the speed of light.
