That's quite a fun question. To be honest I couldn't think of any but found some links to people who could. Here's 6 of the coolest names (IMHO) for each letter.

Uakari: a South American monkey.
Umbrella bird: insect-eating birds similar to flycatchers, native to Central and South America.
Underwater frog: also called an African clawed frog.
Urial: a type of sheep
Urutu: a tropical forest snake native to Central and South America.
Xenops: genus name and common name for a group of nuthatch-type birds native to Central and South America.
