Yes, doing yoga everyday is a great way to increase your flexibility so long as you practice safely. Do not strain or pull yourself. You have to gently allow the muscles to lengthen, and this takes time and patience.
To be able to get your ankles behind your head (yoganidrasana), you also have to stretch your hamstrings and hips, which means you have to do some standing poses like extended side angle bend (parsvakonasana) lot of forward bends like head to knee (janu sirsasana) and (west stretch) paschimotannasana and eventually tortoise (kurmasana).

You can practice it daily if you are concentrating on different areas of your body. I used to be able to do that when I was young and into my 30's. LOL!!! I am an old dude now. I still can if I try but I haven't done yoga in years. It is a cool pose.

I'd probably start at like 4-5 times a week, then as you get better...increase to a full week
