It all depends on the individual stamps. Most common stamps, even if they are 100 years old, are not worth a lot of money. Some stamps are worth big bucks, whether used or not. Most stamps are worth more if they are still on their original envelopes. Good condition is important.

But for collecting purposes, what you like is valuable to YOU. A person can have a great time with stamps and not have any that have a big selling price. Collect what you like and you will always have "valuable" stamps.

Some stamps that are old are worth more used or cancelled as stamp collectors say then are unused or perfect condition stamps for several reasons. Some come from areas where there were few collectors therefore few of the stamps affixed to envelopes were saved. Sometimes the actual percent of used of the print run of a particular stamp was small. Thirdly, some hioher designated stamps like a $1 or $2 used mainly on parcels are harder to find used than unused because, particularily into the 1930's these stamps were hard to sell during depession times.
