Difference is you cook them at home in a small skillet and you control the heat.
A restaurant is using a big flat iron grill that is impossible to lower and raise temps on. It is set to cook eggs, bacon, sausage, pancakes, etc.
To attempt to cool off a section to cook eggs to your likeing would take the cook over 30 mins of clean up, cooling off a section, checking with thermostat, watching your eggs and ignoring the other 19 meals he is cooking, etc.
Eating out doesn't mean you get it exactly how you like it, that is at home. Eating out you eat what they offer or you go to the next food joint.

Most breakfast places use a hot grill so that things can be cooked faster. You have to lower the heat and cook slower to get sunny-side up to come out right. Some restaurants - and some cooks - are either more careful or more talented, so you might get lucky.
I believe (but wouldn't guarantee) that Cracker Barrel uses a slightly cooler grill so they can cook eggs properly; then again, you'll have to wait longer for your food. That's why they leave those little puzzles out for you to play with.

I work at a restaurant that specializes in their breakfasts. they are very good at making sunny side up eggs or any other eggs. I think they keep one side of the grill at a lower temp though because as someone already said it is hard to lower the temp of the grill. I would say if you want to go to a restaurant and get eggs, make sure they know how to cook them. I never get complaints about eggs being cooked badly when I serve them, but again we specialize in breakfast foods.

Because when a cook is cooking in a restaurant, he or she is most likely working on several orders of food at the same time. Sometimes things get over or undercooked because of this. If it really bothers you that much, don't order eggs in a restaurant. Order something else.

I know its the same where i live . I like my eggs firms yolks and all and then when they come to me they are runny . I just quit asking for eggs unless in an omelet etc.. My family and I can only do it the way I like . Why is something so simple so hard for them to do?

I used to be a waitress in one of those small, mom and pop, greasy spoon type kitchens. We cooked eggs over easy, medium, well done, sunny side up, scrambled soft, scrambled hard, benedict, and poached. I never had a problem making sunny side up eggs. What restaurants do you frequent?

well, those are bad or inexperienced cooks.
my husband prefers sunny-side-up, too, but he has learned to order them as "over easy."
they usually turn out fine.

IF you get sick they are held responsible, if things like meats are made raw they have to inform you of the risk of sickness, they don't want to be held accountable.
