It depends on the "gaming level" of the couples.
If there is no desire to play a strategy game, just a social one, my wife and I have always enjoyed Taboo. It combines short rounds with manually operated buzzer for loads of fun. Moreover, if gives an advantage to people who know each other. In fact, the more you know a person, the better you get at the game.
If your gaming interests are a little more sophisticated, try Settlers of Catan. It doesn't take too long to learn, has a randomly designed board for long-term playability, and allows you to make decisions that will lower your winning percentage, while increasing your likelihood of not being kicked out of bed by your partner, without looking like you are throwing the game. The game is a little on the pricey side (~$40), but if you get into it, it will be well worth it.
Finally, if you want fun with some strategy, try Car Wars (or its sister game Battle Cattle). It should be reasonably priced and will work with 2,3,4 or more people. I haven't met anyone who did not enjoy the game.

Try a game called loaded questions. It has become a tradition for me and friends to play this but in a different way. Basically you go around and one person reads a question from a card. Say the question is what is one thing that you could take back that you regret. After everyone answers the person who read the card has to guess who wrote each answer. To make this more fun we added 1.) lots of booze and 2.) we made the answers horribly insulting towards one another, but funny so no one gets infuriated. Anyhow this has been one of the funnest games I have ever played.

I would try a game like Ticket to Ride or Carcassonne. These games are differnt than most games people play, but are light enough that conversation is possible while playing.
Blokus is a good game too that looks cool when putting pieces on the board.

There's a fun game I just played at work the other day called "Whoonoo?". It is played with a deck of cards which has words on them, from activities, to food, to seasons, etc... Each player (except the person who is "it", gets four of these cards. You must pick to of the cards as two things you think the person really enjoys. Each player puts his two cards into an envelope and then "it" arranges them in the order from least enjoyed to most, explaining each choice. You gain coloured chips with points on them, and at the end of the game, the person with the most points, wins.
It's a great icebreaker game, or a game to play to see how well you think you know a friend or partner.

Euchre or Pinochle for a card game and for other games . . .
"Dirty Minds". It's "clean" fun where you are given a bunch of questions with dirty clues, but you have to strategize and think clean!
Example -
"You use me once then throw me away"
"One quick pull gets me off"
"Using me a second time would be sloppy"
You want to say condom, but the ANSWER is a paper towel!!!!!
It's sooooo much fun and this game can keep you entertained for hours! You can purchase this game at adult toy parties.
