Sexual identity, or gender, is a man-made phenomenon. We as a society decided to allow there to only be 2 sexes (in most states, some recognize an "other" category). This makes sense because of the 2 most common types of external genitalia.
Some cultures have several genders. I did a thesis paper in college on a culture that had 5 genders. 3 for women (pre-puberty, menstruating, and post-menopausal). And 2 for Men (pre and post puberty).

There is a third sex. They are called hermaphrodites, meaning they are both partially male and female, usually with underdeveloped genitals of both sexes.

Yes, the third sex is either bi-sexual or asexual people (means people who are not attracted to either genders)
