Drawn and quartered, although the movie added some extra torments that weren't standard procedure.

The real William Wallace was put to death by torture and drawn & quartered.

"On 23 August 1305, following the trial Wallace was removed from the courtroom, stripped naked and dragged at the heels of a horse to Smithfield Market. He was drawn and quartered: strangled by hanging but released near death, emasculated, eviscerated, beheaded, then divided into four parts (the four horrors) at the Elms in Smithfield. His head was placed on a pike atop London Bridge, which was later joined by the heads of his brother, John, and Sir Simon Fraser. His limbs were displayed, separately, in Newcastle, Berwick, Stirling, and Aberdeen.
"

In the movie, all they show is a vague torture scene.

I guess in real life the treatment of William Wallace was worse than in the movie. They downplayed it because they didn't think it would be believable. I guess he was tarred and then drawn and quartered and then given a crown of thorns. Funny enough, at the william wallace memorial in scottland, there is a life size bronze of him and it looks just like mel gibson.

He was tortured trying to get him to say mercy to the king. He screams freedom and they chop he's head off. They then chop off all his limbs and send them to the corners of England stating that it didn't have the effect that Longshanks had hoped. I think his head was put on a stake and displayed to show what happens to those that betray the King.

He was racked, hung, drawn, and quartered, and different pieces of his body were sent to different parts of Scotland and put on display, to act as a deterrent to any more rebellions. It, however, had the opposite effect.

He was tortured, his intestines were removed from his body, and then he was beheaded. So, what kind of death you ask: PAINFUL.

I always thought he was beheaded. I guess was distracted by the "freedom!" bit.
