The beach and boardwalk(I'm sure its still open) is a cross between a Carnival and an Amusement park. Steamer lane is a great surf spot in the summer because it's not so big, in the winter you need to be really good. If you do surf just be respectful they're not that local. Cruise south and visit the Monterey Bay Aquarium on old cannerey row, it's kinda touristy but fun. Before you go back to S.C. take the 17 mile drive and see the famous Cypress tree. Head north and see the Big Basin it's great hiking. Well, have fun.

i love santa cruz, i live like an hour away and i go there all the time in the summer.
basically, santa cruz is a beach town so most of the stuff to do involves the beach and the boardwalk, unfortunately.
*make sure to bring a sweatshirt to the beach, it's always really cold and the water is freezing, it's not like the atlantic ocean. it's also cloudy and misty many times so bring warm clothes with you
ok, sorry, went off topic. you could go to downtown santa cruz, it's really nice.

Great shopping. Go up into the mountains for a great hike or hang by the river. Bike riding.
See the mystery spot--kind of touristy but fun. Roaring Camp Railroad in Felton. There's some nice wineries in the mountains.
And the above poster who said go visit Big Sur has obviously never been--it's a very long drive.

If you'd like to know some santa cruz history you can visit the Museum of Art History which is near Pacific Ave (downtown). you can also visit the nearby university (historic barns, gallaries, student art, banana slugs), or shop downtown, there are some really cute one of a kind shops and restaurants. you also might want to check out who's playing at the catalyst, the club downtown.
that's all I can think of right now.
