Aesop's Fables were a series of stories told by a Greek slave named Aesop. They each had a moral. They include stories like the Fox and the Grapes, where a fox cannot reach some grapes, so he declares that they must be sour (hence the expression "sour grapes.") They also include the story of the maiden carrying eggs in a basket on her head. She daydreams about how she'll raise them to be chickens, then she'll sell them, and so on, until she buys a fancy dress and how she'll turn her head saucily to the boys. When she does, she drops the basket and breaks the eggs. And the moral is "don't count your chickens until they're hatched."

It's Fables, plural. There are several fables or stories attibuted to Aesop. They are usually animal stories used to teach children morals or ethics. Tortoise and the Hare, Fox and the Grapes, etc.
