I have MANY, but the easiest that I know of is to dehydrate sugar with HCl producing pure carbon, but you can also fairly easily, provided that the place that you are doing this in is very well ventilated, make ammonium nitrate using concentrated nitric acid and ammonia, just mix the 2 and put on low heat, you should get a white precipitate, ammonium nitrate on the bottom of the container you are using, just be careful you dont blow up the school, those are about the easiest to do and to explain as to what reactions are taking place.

You could do a thermite demo, an even mixture (mass/volume, thermites not picky) of Fe2O3 and Al powder and lit w/ a fourth of july sparkler will create molten Fe and AlO. Very fast, very dangerous, light in a flower pot over sand and run! Stay as far as you can and still see it (50 ft). 5lbs can burn through an engine block co it can most certainly kill you.

you want demos or what?
if you want cheap little demos go for mentos or sugar in soda, baking soda in vinegar or any of the stuff like that. there are books of this stuff out there...
