For the same reason that Wiley Coyote can run off a cliff and not start to fall until he realises that there is nothing beneath him. The spider is so intent on what it is doing, and on co-ordinating those eight legs with a brain the size of a pinhead, that it doesn't notice it has left the wall, and is now walking on the ceiling. Next time you see one doing this, try shouting at it "Hey you, spider - you're on the ceiling!". I predict that when it's attention is drawn to its situation, it will fall off the ceiling.

Spiders use somewhat hairs which combine with the atoms on the floor which makes them stay on the wall or roof it truly is called van der waals yet tarantulas produce an adhesive like a glue which makes them follow and climb walls

If you've seen Spiderman 1, you notice during one scene it shows small things that look kinda like hair which is what makes Peter climb walls. Same concept with regular spiders.
