How do I determine if I would want to eliminate these additional "unable to scan" items.

Are you running any other anti-spyware programs, such as Ad-Aware or Spybot Search and Destroy? It could be that some files within those programs are held in an archived format and are protected from being scanned. If so, it's okay to just leave them alone.

Your unable to scan items are running background processes. If you want to scan those files then you need to shut down the background processes that are running. However be careful if you shut down the wrong processes you will shut down your computer and you will have to reboot. There won't be any damage done but you will have to start over completely.
