If you go here, http://en.wikipedia.org/wiki/Citric_acid, you will see the proper strutural formula and drawing of citric acid. You will also notice that it has 3 carboxylic acid groups (-COOH). Each of these groups can lose a proton to a base.

Since three acid groups are present, 3 moles of base is needed.

There is also an alcohol group (-OH). The -OH group is attached to a carbon that is in turn attached to 3 other carbon molecules. Therefore it is a tertiary alcohol and will form a stable carbocation if the (-OH) group loses its proton.

Since it has an -OH group forming a tertiary alcohol, it will react with 1 mole of base.

Hence 4 moles of base are nedeed.

HOOC-CH2-C(OH)COOH-CH2-COOH + 4NaOH =

NaOOC-CH2-C(ONa)COO(Na)-CH2-CO ONa + 4H2O

3NaOH + C6H8O7 ---> 3H2O + 3(Na+) (C6H5O7)3-

the (Na+) and (C6H5O7)3- are charged species that are ionic in nature
