It's called the "Draw-a-Person" test in psychology.
It's a projective test that is supposed to reveal something about you.
In reality, the test is of dubious validity, like most projective tests.
It is truly unfortunate that people are still using (more specifically, MISUSING) tests like this. It should have been relegated to the status of phrenology decades ago. There isn't an ounce of scientific evidence to back its use for what people try to use it for.
About the only thing that DAP tests have been shown to predict in studies is artistic ability.
Unfortunately, pseudoscientific psychology is alive and well today. Scientific psychology continues to make gains, but the "sexiness" of pseudoscience always seems to appeal to some people.

for example: if a person draws the man behind the desk, interviewing the woman, one might percieve this as the male dominating the interaction.

Likely it's just to see how you react under pressure to unusual demands.
Unless your story involves rape or homicide or something, it probably doesn't matter what you actually put together, as long as you appear confident while doing it.
