In such springs, the perched water - the water (collected rain water) separated by thick rocks from the sea water - are available. There are less chance of mixing up of sea water with these sweet water. For example, in Rameswaram island (India), near the lord shiva temple, 27 sweet water wells are existing. The waters from these wells tastes differently. This is due to protection by thick rocky layers in the ground in the coastal regions. This type of water is called PERCHED WATER.

They mix, but there's so much more salt water than fresh water. Also, notice that rivers and streams flow into oceans; the pressure from the flow of the river keeps the rivers from taisting salty.
