Both Xenmas and Joe R are right. The Savoia, the Italian Royal Family, were originally from Savoy, a French region which borders with Piedmont, which used to be French too. Blue was their color. Italy became a republic after WW2, but the national team was formed before, when Italy was still a monarchy. That's why they picked that color.
So, as you can see, French and Italians are actually "cousins". But on Yahoo Answers, you can't tell! ;-)

Sky Blue was the color of the Royal House of the Kingdom of Italy. Italian team used to wear white shirts.
So essentially the blue is a commemoration of Italy's past noble heritage.
Blue is also incorporated in Italia's national soccer team logo.

It has something to do with when Piedmont was part of France a long time ago (Kingdom of Savoy). The French used blue as their national color (as they do today). When Piedmont left France and became part of Italy, the blue color remained and eventually made its way into the national soccer team's jerseys.
