Daddy's hands came out in the 80's, so that might be too early.. There is a song by Doug Supernaw (?) called I Don't Call Him Daddy. George Straigt had a song that could be it, So much Like MY Dad.

There's "A Love Without End, Amen" by George Strait (it mentions daddies and fathers).

There's also "Daddy's Hands," but that was sung by Holly Dunn.

Daddy's Hands?... There's one about being at least half the dad (his) stepdad turned out to be... I'm sure there are hundreds more but those are the first two to spring to mind.

Daddy's Hands is sang by Holly Dunn (a female). You might be thinking of "That's My Job" by Conway Twitty. He refers to daddy.
