"Nights In White Satin" by the Moody Blues: a song that can be awesomely re-created in nearly infinite styles with an acoustic guitar.
I respect your wish for simple acoustic songs, but another great--but somewhat challenging--acoustic guitar song is "Ship Of Fools" by Robert Plant.

i started by playing some old john denver songs....leaving on a jet plane, rocky mountain high, country roads. then i graduated to Tom Petty's Free fallin, almost everybody knows it and its fun to play and sing. also ring of fire by johnny cash just has three chords G C and D its easy and fun. but my current fave song to play is "hey Yah" by outcast. i do it all acousticand folkify it a little. the peo[ple love it and its a song you dont expect an acoustic musician to play
