Could it be the thermostat? I have to fill the coolant bottle quite often. Seems to get to that point when it's really hot out and I use the air conditioner.

Do you have steam when you open the hood? You may have a radiator leak. Could be the thermostat, but since you're losing coolant I suspect a leak.

Chrysler products are well known for the fan relay going bad. I bet if you look under the hood when your car starts to overheat the electric fans never come on.

it probably needs a new water pump or its leaking coolant somewhere and if it doesnt have coolant it wont cool down
