It is much better to have the trans in 3rd and be turning 4500 rpm's than to keep the car in 5th. Rule of thumb would be that if in any gear you have the accelerator in a WOT position ( wide open throttle ) and the car can't gain speed you should be in a lower gear. This applies only until your cars top speed. Then for example, if in 5th gear @ 110 mph, by shifting into 4th would only rev the engine higher but you would not gain speed.

The speed is not important. It is the speed of the engine or RPM. I would guess with that car it would be better to downshift one gear. The engine would probably like it better.

Use the fifth gear as long as the car is not having a hard time going up, but you don't want to use the third. The third gear is good for steep inclines, but it's also for slower speeds. The higher the gear, the faster the speed and vice versa.
