Cowboy Bebop IS A MUST SEE!!!! FOR SHAME THAT YOU HAVN'T SEEN IT!!
Evangelion, Bubblegum Crisis, Hellsing, Ah My Goddess, Princess Monoke, Armitage, Ghost in the Shell (very good).
Oh and Samurai Champloo is right up there with the best of them, hilarious, with excellent action and awesome music just like Cowboy Bebop.

Fullmetal Alchemist, Narutaru (NOT naruto), Fullmetal Panic (the same guy, Vic Mignogna, that does the voice for Ed in Fullmetal Alchemist does the voice of Kurtz in Fullmetal Panic. Desert Punk is pretty good, too.

Full Metal Panic!
I really like that anime because it is funny, cute, sweet, and sad. The main character, Sagara Sosuke, is a military “nerd” that was raised in the military. He is put in charge in protecting a girl, Chidori Kaname, in High School. So, he goes “undercover” as a High School student. He’s awesome, but he takes his job TOO seriously. It’s an awesome anime! I love it!
