EVH - One word "Eruption"

Hendrix - If you've watched him at Woodstock, you know that that guy played the guitar like he just stole it

Kirk Hammett - Probably overrated, but he knows how to flow metal, rock, and blues into a seamless taprestry with just the right amount of energy to prevent looking like he's masturbating on the guitar a la Steve Vai

Satch - To hell with Vai, Joe can rock without getting kooky, and be virtuoso without being flaming. Not only that but he's not afraid to get innovative...check out "Engines of Creation" to see what I mean

Keef Richards - If any guy can rightfully be called the stereotypical guitarist, it would be Keith. He's done more drugs than you'll find in 10 years worth of Amsterdam raves, yet he's still tickin' and reminding us everyday that you can have rock without the four-on-the-floor blues.

My List:
1. Jimi Hendrix-no explanation needed
2. Ritchie Blackmore-Cool Licks and raging hot riffs, very hard driving
3. Jimmy Page-Very creative in his work, took Zeppelin (And the Yardbirds) to the next lexel
4. Stevie Ray Vaughan-he could play anything good but shedded in the blues department.
5. Randy California-May not be a shredder, but listen to his stuff, it is very original and has a good groove.

Seems that most people consider Rock guitarists the best. There are some really fine guitarists on these many lists, and I'd like to add a few, if you don't mind.

1. Rik Emmett, formerly of "Triumph", has continued a solo career that features some of the finest guitar playing around. Emmett has achieved "virtuoso" status internationally.

2. Stanley Jordan - one of the finest Jazz musicians ever....he has recorded an instrumental version of LZ's "Stairway to Heaven" which is mindblowing, considering he is the only guitar player on the track, and he makes it sound like 3!

3. Stanley Clarke - Jazz Bassist extaordinaire

4. Donald "Duck" Dunn - widely regarded as the best blues bassist on the planet

5. Robert Michaels - Premier acoustic Jazz/new age/Flamenco style guitarist from Canada.

Although I really enjoy most Rock guitarists, and can appreciate the style, I think embracing all styles of guitar playing makes alot of sense, especially if you are a fan of the instrument, which I am.

All of these were innovators. Satriani and Vai can really wail, but they are just following what others did.

Added:
from looking at the rolling stone list, i would throw John Cipollina of Quicksilver Messenger Service in at #6. He could really wail.

Added again:
Eric Johnson-pick up Ah via musicom- he is a smooth guitar player
Phil Keaggy is another smooth player-it is rumored that jimi hendrix said that he was the best guitar player
John Lennon/George Harrison-the beatles rule
