Named after Mr. Adi Dassler, the German owner of the brand. (obviously the first three letters of this first and last name).

His brother by the way founded Puma.

For some time there has been a rumour that Adidas meant "All Day I Dream About Sports (or Soccer)" .

All Day I Dream About Shoes just kidding, it was named after its founder, Adolf (Adi) Dassler, who started producing shoes in the 1920s in Herzogenaurach near Nuremberg with the help of his brother Rudolf Dassler. It registered as Adidas AG on 18 August 1949. The company's clothing and shoe designs typically include three parallel stripes of the same color, and the same motif is incorporated into Adidas' official logos.
