Enzymes in the onion cause amino acid sulfoxides that
form sulfenic acids, which then rearrange themselves into a volatile gas. In the tear fluid of the eyes a mild sulfuric acid is formed that irritates the eyes. Check the website for more info about onions.

When we cut an onion,tears follow.This is because the cellular structure of the onion contains sulphur compounds.When they are exposed to the air they react with air and form sulphur dioxide.This is an acidic oxide and when it reacts with the moisture on the surface of the eyes it forms sulphurous acid which burns.

So why do they make you cry? When you pierce an onion you cut its cellular network. A series of sulfur-based compounds are released that instantly combine and recombine in a lightening fast succession of chemical reactions. Sulfonic acid is given off and triggers the tear response when you breathe it in. So just don't breath when cutting one lol

it's the sulfur in the onions hitting the water in your eyes creating dilute acid which causes stinging which causes more tears to flush it out.
