Good questions. The Civil Rights Movement helped benefit women more than any other group, then Asians, and now Hispanics also reap the benefits. I think that fact that these groups weren't mentioned at all during this time just means that they weren't considered "American". I think we should all be granted our civil liberties. Had the Movement only focused on African-American civil rights, it would have be contradictory. "Yea, you whites should treat us blacks as equals, but screw the Asians" - that wouldn't have been right!

That would be just as racist as the Jim Crow laws themselves. Whites also participated in the struggle for civil rights, and I'm sure other minorities did as well. Colored really only refers to African Americans, not so much to Asians.
