It depends on the email client/software/service you are using.
If you are using outlook/outlook express, go to the properties of the email account, and change the display name to something else.
For services like hotmail,. change the 1st and last name of the acount holder under preferences. That should take care of it for you.

If you're using yahoo mail, go to mail, options, mail preferences. You can change your name there.

which email client are you using?
in outlook, firebird you can just write in the name line what you want
