Listen to Carole King's album "Tapestry" from 1971. Her covers of three songs are as good as the originals, and considering that King wrote them herself, makes them better than the James Taylor or Motown recordings because of the emotion.

(You Make Me Feel Like) A Natural Woman
Will You Love Me Tomorrow?
You've Got A Friend

King and her husband Gerry Goffin wrote *100* hit singles in the sixties. Probably the only songwriting teams with more hits were Lennon/McCartney and the Gershwin brothers.

I'm a huge fan of Cash's cover of "Hurt". That's the closest I've ever come to crying at a music video - very powerful, a perfect song choice for a hero to go out with. Fantastic cover.

On a sillier note, Muse's cover of the Animals' classic "House of the Rising Sun" is amazing. It's a little over the top, but Bellamy's vocal stylings work perfectly with the tharshing guitar and he belts out a strangely emotional rendition of the song.

These are the 2 best in my opinion (couldn't split them, but Metallica must always be first...)

Whisky in the Jar - Thin Lizzy, covered by Metallica.

Pleasent Valley Sunday - The Monkees, covered by The Wedding Present.

Unchained Melody by the Righteous Brothers is in my opinion the best "cover" version of the song. First released in the 50's by several artists, this song is said to have maybe 500 versions.
