My first choice would be Rodin's Thinker. It is a reminder to us that we need to take the time to just sit and think. So few people do anymore.
My second choice would be one of my own design. It would be very abstract and force the viewer to see things in a different perspective. It would embody the everyday things they are using to looking at but never really see. Each viewer would see something different every time they looked at it. This would allow the students to learn to see other perspectives in their daily lives and to never rely on first impressions.
The third would be a statue of the family of man, also of my own design. It would be a circle of people of different races and backgrounds holding hands and looking at each other. A farmer, a woman holding a child, a business person wearing a suit, an actor in costume of some sort and a native wearing a tribal costume would be a few of the people I would want to include. I would try to make sure that all races were included, but not as stereotypes. A plaque would read "The Family of Man Must Come First". This design would remind the students that tolerence is one of the most important lessons they can learn.

Sculptures of three of the greatest people placed on this earth -
Martin Luther King - to remind people that with sheer determination and will power, we do have the ability to change this world for the better, that we need only to choose too.
Albert Einstein - to remind people to challenge the way we and others think about life, that we may find the right answer as long we look deep enough and have an open mind.
Mahatma Ghandi - With a little sacrifice, some patience and by putting ourselves to be at the same level as those with the power, we can improve the lives of those we care about.

I don't know the name of the piece or the artist, but I would put a copy of this sculpture from the Yad Vashem museum in Israel at every college in the world, if I could:
http://en.wikipedia.org/wiki/Image:Israel-Yad_Vashem_Sculpture.jpg
When you see it, you'll know for yourself why I chose it. Too many of today's youth are unaware of what horrible things can happen in the big, wild world. (Not just to Jews, but ANY people.) Too many college students are caught up in the excesses and exploits of the Hollywood and the music industry dingbats, who's biggest problems are that someone else showed up at a party with the same $5,000 Gucci bag as they're carrying. They like to live in and exploit democracy, but not to take care of it or defend it. Many of the older Hollywood idiots like to trash it. Yes, life should be fun; you should live it, enjoy it, make the most of it, but that doesn't mean you should look away when others---even those not in your neighborhood, state, country---are truly in need of help, salvation, or liberation. College students should see this sculpture every day and remember.

Ludwig Van Beethoven, Amadeus Mozart or Gioacchino Rossini.
The reason is clear, even Einstein, George Washington, Churchil, Gandhi, Hawkings, Mandela, Cervantes would be forgotten in time. The classical music is neverending, no one can beat what it's been written in a pentagram by these genius, no one can distortion it or use it for own 'evil' purposes, that music is pure, straight from their heart to yours.

The Thinker by Rodin. I would hope that people would see the institution as a place where thinking was required and celebrated versus regurgitating and parroting back information.
No choice yet for 2nd or 3rd.

I absolutely love anything by Henry Moore, especially if it's abstract. The way the forms merge with the natural environment gives me a sense of peace and groundness.

One of those fountains with the kid peeing into it. Then the Thinker, then some modern work, like having several very large letters and numbers that can double as places to sit.
