It's the act people are taking as they answer this question---letting out a sigh, briefly closing your eyes, and then looking upward quickly and back down.

Rolling your eyes suggests annoyance with a person or a playful gesture as if to say "Be serious". Most of the time, rolling eyes means that some one has a problem with you.

It is when somebody is looking at you, then looking up, then at you again. And the looking back down is not direct, but sort of the eyes go around a bit, that's why it's called rolling one's eyes.

Also, the brows go up.

It means exasperation, annoyance, but with a bit of humour usually.
