The italians probably knew the game was going to penalty kicks, so materazzi probably did that to get Zidane ejected so his team would have a chance.
go to wikipedia and look for zidane, it discusses what lip readers think materazzi said, including calling zidanes sister a prostitute, twice.
Headbutting incident
Zinedine Zidane headbutting Marco Materazzi during the 2006 World Cup Final (animated image, video, alternate video, front angle video)He was sent off for violent conduct after headbutting Italy's goalscorer, Marco Materazzi, in the chest in the 110th minute. The game ended in a 1-1 draw and Italy won the championship after a penalty kick shootout.
Both Zidane and Materazzi refused to comment on the incident. Zidane's agent Alain Migliaccio said, "[Zidane] told me Materazzi said something very serious to him but he wouldn't tell me what."[13] Reportedly, the deaf forensic lip-reader Jessica Rees was employed to analyze the video sequences with the help of an Italian translator. According to these reports, Materazzi spoke in Italian - a language understood by Zidane due to his time spent with Juventus F.C. - and first told him: "Hold on, wait, that one's not for a ****** like you." As the players walked forward, Materazzi allegedly said: "We all know you are the son of a terrorist whore." Then, just before the headbutt, he was seen saying: "So just **** off." [14] [15] According to Brazilian TV Rede Globo, a lip-reader claimed that Materazzi twice called Zidane's sister a prostitute.[16] Earlier claims about Materazzi having called his opponent a "dirty terrorist" have been denied by Materazzi, who reportedly said: "It is absolutely not true, I did not call him a terrorist. I'm ignorant. I don't even know what the word means." [17][13]
On July 10, 2006, Zidane was awarded the Golden Ball for the best player in the 2006 World Cup. The winner was selected by a poll of journalists covering the tournament. Zidane narrowly won the award with 2,012 votes, closely followed by second place finisher Fabio Cannavaro, who polled 1,977 votes. Although the polling continued until midnight, most votes were cast during half-time, prior to the headbutting incident.[18][19]

He was joking. I guess Materazzi has rather punk sense of humor and his jokes may seem offensive to some people.
What we should be outraged though is the absolutely inappropriate violent response from Zidane. I can not believe some people defend him just because he is famous footballer. So should we also allow your favorite footballers to rape children on the street if they will so desire?

Because they tried earlier before the incident to get rid of Zidane by injuring him, we all saw it when Zidane asked to be replaced.. But bravely, he continued....
Italian realized that they're going to loose if Zidane stayed so he said what he said, and know one knows what that was, but god knows it was offensive that made zidane throw the last game in his career and a very important game for France to fight back...
In my opinion, Zidane did what he had to did, and I am proud of him....

nothing's been proved yet so let's all defer judgment. most likely reason is, he's goading zizou to lose his temper and do something really nasty so he would be sent off. italy's coach, marcello lippi, knows zidane and his trigger points well having worked with him before in the serie a league so it's all strategy. thing is, it went too far and zizou unfortunately played into their hands. but who's to blame him? some things are more impt than football. but the french i think understand and they forgive him for it. he's been given the royal welcome there (see media releases). well except maybe some of the media who are milking the issue for all its worth. circulation, y'now.

IT IS NOT PROVEN THAT HE SAID ANYTHING RACIST AT ALL
EVERYTHING SAID BY A LIP READER IS HEARSAY
HE SAID SHE SAID..
IF IT DOESN'T COME FROM ZIZOU OR MATERAZZI..THEN I DON'T WANT TO KNOW...
BESIDES IT IS ALL WORTHLESS TRASH TALKING...
ZIZOU SHOULD BE ABOVE ALL THAT...
BUT INSTEAD HE LOWERED HIMSELF INTO THE SAME SCUM THAT HE HAS BECOME..
