They're made from fresh potatoes, so why is there hardly any moisture in them? Are the potatoes freeze-dried? What kind of potatoes are used? If anyone works there, please let us in on the secret of fries that taste and feel almost like the canned shoestring potatoes.

Btw, they weren't burned or anything, the color was right on target. Also, you can see them cutting and cooking the potatoes. I'm just wondering why on Earth they are soooo dry inside? If you go to a diner and order fries, the good kind that are thicker and soooooft inside, there's a world of difference between those and In-N-Out.
Healthier? Perhaps because they're less greasy, I will agree with you on that one.
