They're made from fresh potatoes, so why is there hardly any moisture in them? Are the potatoes freeze-dried? What kind of potatoes are used? If anyone works there, please let us in on the secret of fries that taste and feel almost like the canned shoestring potatoes.

Btw, they weren't burned or anything, the color was right on target. Also, you can see them cutting and cooking the potatoes. I'm just wondering why on Earth they are soooo dry inside? If you go to a diner and order fries, the good kind that are thicker and soooooft inside, there's a world of difference between those and In-N-Out.

Healthier? Perhaps because they're less greasy, I will agree with you on that one.

I don't work there, but it is fresh potatoes. The problem is, they leave it in the fryer for either too long or too little. When it's left too long, too much oil is exposed and we may be at risk for heart attacks and all those junks. It is too dry because it is fried too little. There's no crunch to it like the normal greasy fries you'd find at McDonalds. Even though it's dry, just remember that it's "healthier" than the moist, greasy fries. Notice I said "healthier" .. haha .. fries are great for killing our bodies, but who cares? We only have one chance to live.

Two reasons: 1.) they dry them off with a towel when they come out of a frier so that they're not all greasy. 2.) they are cooked with a different kind of oil than the traditional fast food french fry.

Hmm, interesting question on whether or not the potatoes are frozen before being cut up, but they use Kennebec or Russet potatoes to make the fries.

The fries at In N Out are thinner cut, almost shoestring style. This means there's more surface area on the fry than thicker, diner-style fries. The larger surface area means that when they cook, more of the water in the potato is leached out and cooked away.

I've never had them as dry as you describe though. I actually like their fries. Maybe the oil was too cold when they cooked?

Do they fry them? If they don't that may be why. Baked fries turn out a bit less moist, though they are probably freeze-dried, too. I'd really doubt a fast food place would have that many potato's out.
