Italy
The traditional colour of the national team (as well as of all Italian teams and athletes, except in motor sports) is sky blue[1] (azzurro, in Italian), and therefore national team members are nicknamed Azzurri.

Sky blue was the color of the Royal House of the Kingdom of Italy. In its first match, the Italian national team wore white shirts with shorts from the club of each player; the sky blue shirts were introduced in the following match.

Australia
It was not until April 19, 1984, that green and gold were officially declared Australia's national sports colours by the then Governor-General, Sir Ninian Stephen. The combination was, however, used in the jumpers, blazers and caps of the Australian cricket team to tour England in 1899, but was not ratified by the Australian Cricket Board until 1908. It was also worn by the Australian Olympic team in that year, while the Australian Rugby League adopted the colours in 1928. Green and gold were the popular choice to represent Australia internationally because the colours closely resembled those of our national emblem the golden wattle.

Sometimes, we are led to believe that colours have an effect and a message they send to opponents.Flowers are bright to attract pollinators like insects.
In the same way,i think Australia wear yellow to display there brightness in soccer,or their attractiveness. Another opinion is that maybe yellow represents the sunshine in Australia.

THE MOST LIKELY ANSWER is that designers ,for example Nike,Adiddas,e.t.c have those colours selected because of the effect it will have on the design.
I dont know if u have ever heard that Nike was telling Juventus to drop there stripes,so that they could make them a good jersey.

NEVERTHELESS, that shouldn't be much of a concern ,afterall, they put the National flags on the Jerseys.
