Check to see the compressor is not seizing up and check to see that your alternator is ok. A/cond draws a lot of amps. Vehicles with air cond.have alternators that produced 20-30 more amps than cars which don't have air and if the air is stealing amps from the battery which your ignition system needs to run efficiently, your ignition will fail or in the least perform poorly.

Most likely the A/C compressor is locking up. This will cause it to be EXTREMELY hard to turn and will either stall the engine, or cause the belt to slip. The A/C uses almost no power from the alternator as suggested before, so disregard that. You should have it checked out by someone who works on A/C they can tell you if you need a new one.

a cars ac has a compressor that runs off a belt from the engine. It takes up several horsepowers and puts a load on the engine when it comes on. It does not take much from the alternator (really just for the magnet clutch and the blower).
Since you didn't state the year of your car, I don't know if it's a fast idle problem (carb) or if it's a sensor or your computer needs to be adjusted.
I would also check (first really) to make sure that you don't have a belt or tensioner problem.

Your A/C puts added load on the engine. Your engine's control systems are supposed to compensate for this extra load by feeding more fuel to the engine to kick the revs up when the A/C kicks on. If it doesn't, you will lose power and possibly stall. Have a mechanic check it, get a good tune up, change the air filter, and make sure there's no loose vacuum lines, because they also cause this.

You should have a motor or selenoid which kicks the idle up when turning the air on. If you have a problem with the compressor or some other problem such as blockage in the system that could also cause your problem, chances are the belt would brake first!!

bad compressor bogging down or maybe your idle not high enough on newer autos have a sensor should take care of it
