it depends on the type of turtle most of the time water turtles such as red eared sliders , paint turtle and such are omnivores eating bugs, worms , fish and plant life . DON'T feed lettuce!! at least not iceburg lettuce, that stuff is worthless and he'll eventually die on a diet of that stuff. Feed him turtle food. (not being sarcastic) You can get aquatic turtle food at pet stores. Also, feed a fair amount of greens (mostly collard greens or mustard greens), some carrot, apple, squash, (NO spinach or broccoli). Depending on the type of turtle they may eat more vegetation (red eared sliders) or more meat (painted turtles). Meat can be feeder fish, shrimp, boiled ground turkey (VERY popular, and healthy), boiled lean beef or chicken, crickets, worms, just about anything.
PLEASE consider letting him go where you found him. Turtles can be a LOT of work (and $$$$) if you want to keep them healthy for a long time, and a lot of wild caught turtles don't adjust well and can go downhill health-wise very quickly. He'd be a lot happier back where you found him.

Dude! I totally can't believe your asking that question because we just found a turtle crossing our street a couple of days ago and its a water turtle. So far, its been doing good on lettuce. But we've been keeping him in a container with shallow water. I have a death fear of turtles but my son wanted to "save" it so, I'm looking at it thinking it could probably use some exercise. So I have a friend pick it up and put it on the floor so that it can stretch its little green legs. Well who ever said that turtles were slow 'cause this thing actually CHASED ME! Well, no more pity for little 'Tippy'. He can get his exercise swimming in his little container.
