Les Pauls are equipped with a Tune-O-Matic bridge so it's pretty simple to change them out. You run the string in through the back of the bridge and over the fretboard to the tuning pegs just like you would any other guitar of similar design. There is no locking nut to fool with and if it's been set up properly (which all are coming from the factory) you won't have to make any adjustments to the bridge. The intonation should also be accurate unless someone has monkeyed with it.

just like any other guitar, but dont take all of the strings off, change one at a time, or leave at least one on, so you dont loose your tune o matic or change its settings
