How many songs depends on how much data a song contains. On average, each song carries around between 3.5 megabytes of data. If that is the case, you should have more or less 285 songs. Again the total data from each song depends on both the lengh of the track as well as the quality (the longer and higher the quality, the more space it takes up).

the only 1GB iPod is the shuffle, and Apples page says it holds 240 songs (average) -- remember that the operating software takes some room, even on a Shuffle.
__OOOPS! My bad! I didn't know they came out with a 1GB Nano... it's listed on the same page I link to below and also claims 240 song capacity.
