Basically, it is a time-keeping word used by the quarterback to count time for the snap. The team entitled to snap the ball will usually know in advance the moment when the snap is to occur as one of their players calls out signals, which usually include a loud sound such as "hut" voiced one or more times, the number of which they know; they are thus said to know the "snap count".
So, basically it is a way for a quarterback to tell their team when he is receiveing the snap and when they are to begin the play.

to trick the defense.
the offense should already know what the "count" is. count of four is when the ball is hiked on 4. Ex. "Hut, hut, hut, HIKE". the hut is to make the defense jump and be offside so they can get free yardage without taking hits.
