Peroxidase is one of the easiest enzymes with which to work. A lab using peroxidase derived from turnips (reference 1) would be easy enough to replicate.

Snake venom Phospholipase A2 activity can be titrated using egg yolk as a substrate. It hydrolises the phosphotidylcholine in the egg yolk and the activity can be measured by a change in pH. We used to use this method to check the purity of the enzyme after We had extracted it from the venom of various Pit vipers and put it through a column chromatography purification proccess. The purified enzyme can be bought from biological suppliers such as Sigma Scientific.
