We are thinking about buying this one horse. She is GREAT! She is a Quarter Horse Mare and is 5 years old. She will need a lot of training but we can solve that problem. But another problem is, What's a good name for her. (I have Paris in mind.)

I think you answered the question yourself. Paris sounds great.

My personal choice for a name of an animal that will reside with me indefinately could never be picked by anyone but me. Suggestions are nice. But a name should coincide with the animal itself. Names are very important, I usually debate over the name by the animal's personality, color, expectations, etc. Sometimes I know the animal's name immediately upon site. Sometimes it can take a while for the name to come to me.
But, in response to your question, I will list some mare names that either I have owned, trained, or been associated with throughout my life time.
Dixie, Cooter, Nala, Mascara, Blaze, Demi, Donna's Way, Sugar, Rain, Sunny, Mare, On a Dime, Peppy, Rita, and Sandy.
Never had real good experiences with mares, I prefer geldings/studs, that list is too long and of no use for a mare.
Best of luck to you and your horse.

Other names for a quarter horse mare might be:
Sophia
Sophie (from M*A*S*H)
Cinammon (if she is cinammon red)
You have said that you had Paris in mind. You might also consider her characteristics and maybe her color in naming her. I am much better at dog names than horse ones, but I thought I'd give this a try.
Other names might be
Princess
Dutchess

I don't know if this will help, but I had a mixed breed terrier and I named her Lady because she walked and held her head just like a lady.

What ever you do decide to name your horse make sure you are creative with it but not so bad that it sounds really off the wall. Paris is a good name. The only reason i say be creative is my husbands mare's name is "Horse". Her colts name was "weiner". I asked him why and he said because she looked like horse and her baby had a weiner. So just make sure you are creative with your name.

Naming a new horse is just like naming a new child or choosing a chat nick name..

Paris is a great name..
