It depends what you like to read! Everybody's definition of a "good" story is different.
For an easy read you can try something like the "Notebook."
If you want to have to actually sit and think about the story after you put the book down I would recommend "A Fine and Prviate Place" by Peter S. Beagle. It is an atypical love story, it redifines "love" (not in a bad way either). You will feel like you actually learned something about love (rather than just reading a fuzzy love story with no meaning--the fuzzy feeling is still there, but it is coupled with deeper meaning and some sub-plots).
Or, if you are into more traditional notions of love, then most Jane Austen books do the trick (one person already mentioned "Pride and Prejicude," but I personally prefer "Sense and Sensibility.")
If you are looking for something shorter than a full fledged novel you may want to check out "Love Medicine" (the short story, not the novel) by Louise Erdrich. It is a good mix of different narrative styles and different takes on "love." If you end up liking the short story you may want to consider her novel by the same title (though the novel is not strictly a "love" story, it is very good and does have some romance in it).

"Katherine" by Anya Seton - It's based on a true story from medieval England about a prince and a herald's daughter. It's my favorite and great book to escape into another time and place with.
You also might want to try Diana Gabaldon's "Outlander" series. They're about the marriage of an 18th Century Scots Highlander and a 20th Century combat nurse - and not nearly as silly as that premise sounds. But be warned, Gabaldon is descriptive about *everything* - even the stuff you probably don't want to know about.

If you like a longer book, you might try Diana Gabaldon's OUTLANDER.
It's well-written with 3-dimensional characters and a lot of humor. Plus, at 850 pages you really get your money's worth. And if you try it and it works for you...it's actually the first book in a series, so you'll already have more options to keep you busy for a while.
Take a look at the official website I've listed. It includes book excerpts from the Outlander series. That should help you figure out whether you'll like it or not.

Anne Gracie-The perfect rake.The heroine just wants to save her sisters from their abusive grand father.However one lie led to another and another.The hero was perfectly willing to go along with the charades.

Another good series is the Dark Hunter series by Sherrilyn Kenyon.The books provide an alternate take on vampires.People who are unjustly murdered call upon Artemis(Greek goddess) and she grants them a day to avenge themselves.After that they are recruited to her army to fight against evil.This series is romance based.Best of the series are 'Dance with the devil' and 'Seize the night'.
Werehunter series by Sherrilyn Kenyon.The books in the series are Nightplay,Dragonswan,Stroke of midnight,Unleash the night.These are romance novels.You can read not only about were-wolves but also about were-dragons,were-panthers,wer... and were-tigers.The heros are handsome,powerful and with a mysterious past.Interesting reading.The best of the lot is Night play.

I just saw a movie called Tristan and Isolde and it was such a good, and heartbreaking love story. It is a re-make of an older movie. it came out in 2005. Anyway, check and see if they have a book of it. I'm pretty sure they do. On the front of the dvd it says before romeo and juliet there was tristan and isolde, if that tells you anything. The movie was great, so hope you get the book.
