Sky blue was the color of the Royal House of the Kingdom of Italy. They're now a republic, but I suppose they like the colour and history.
It's much the same with the Netherlands: red, white and blue flag, yet everyone plays in orange because it's the colour of the Dutch royals - who have roots in the French town of Orange and adopted 'of orange' as a surname hundreds of years ago.

It's the colour of the Savoy Royal family, who set up the first professional national football team in Italy.

Perhaps, because like Florida, they are a peninsula surrounded by water? Perhaps because Azure is not only a semi precious gem stone, but the color of the water surrounding them, which by the way, happens to be beautiful,,,, AND/OR perhaps many of them who make up the team are "water signs" Like me,,,LOL Scorp,,,
Does it truly matter???
If you do some research,,,no offense meant by the way,,, you'll probably find hundreds of sport teams whos names might be confusing.

I'd venture a guess that it has to do with Italy's historical affiliation with the seas and trade

I also think it has to do with Italy being surrounded by sea from almost every side...
